Situated in the north-west of Kyoto city in the quiet neighbourhood of Cheikoin, we have set up a small roastery and coffee lab. Here our staff study everything about coffee in earnest: the beans; the roasting process; the brewing process, all in order to deliver the best cup of coffee possible. Our beans have been come from all over the world, grown by farmers passionate about coffee. After carefully selecting the green beans, and while taking into account the temperature and humidity of that day, we roast to bring out the innate flavor of that country and variety.
We roast small lots in order to roast with the most amount of accuracy and attention to detail. It's a lot of work but it's this unyielding devotion to roasting small lots that makes our coffee delicious.
We roast on a Diedrich roaster shipped from America, which we chose because we felt it was best suited to our pursuit of quality. Diedrich is a hot-air style roasting machine where the beans are roasted by convection heat.The temperature is very easy to control, introducing heat gradually resulting in a consistent and even roast. The resulting flavor is clean bringing out the full sweetness and acidity of the bean - it's the perfect roaster to showcase the characteristics of modern specialty coffee.
We also use a domestic-made HCR-1000 which ideal for small batch test roasts. Each machine is carefully built. It's easy to use and well up to task of bringing out the beans' flavor.
We hope that our roastery will become a place of exchange between our staff and customers, a place to become even more fond of coffee - aside from roastery we also plan hold events in the space.
